5 Minute Pesto W/ Cashews

Our garden is overflowing. After nearly dying earlier this summer, some coffee grounds and a little fertilizer has taken our little raised garden to the next level and now we have basil coming out our ears. So, what else to make other than incredible home made pesto. This recipe takes 5 minutes and uses cashews in replace of pine nuts.

We pour our pest over gnocchi with a sprinkling of fresh parmesan and call it a deliciously simple meal, and what’s left over can be frozen or used throughout the week. Give it a try this weekend and enjoy the tastes of summer.

Pesto W/ Cashews


-3 cups basil leaves

– ½ cup cashews

– ½ cup fresh grated parmesan

– 3 cloves garlic

– 1/3 cup olive oil

– salt & pepper to taste


  1. Add basil, cashews, garlic, and parmesan into a food processor. Begin to blend while gradually pouring in olive oil. You can also add olive oil all at once with other ingredients. Blend for 1-2 minutes until smooth. Add salt and pepper to taste.
