Keep It Simple!

Salads are simple, and so are these recipes! If you’re anything like us, you’re taking part in your “social responsibility” and staying in more, eating out less. These two salads are perfect midweek recipes that don’t require much work (or ingredients…the grocery stores are NUTS right now!).

Caprese Salad with Chicken & Avocado

Ingredients:

Chicken tender strips (cut into 1-inch pieces)

Spinach

Fresh mozzarella (if your store sells the little balls of mozzarella, those are easiest)

Prosciutto (optional)

Cherry tomatoes

Avocado

Fresh basil

Balsamic glaze

Oil (we use avocado oil)

Salt & Pepper to taste

Directions:

Season chicken with salt and pepper. Saute in cooking oil (avocado oil) for 2-3 minutes on each side until cooked through. Cut into 1-inch pieces and set aside.

Layer the salad – spinach, avocado, cherry tomatoes, fresh mozzarella, prosciutto, chicken and basil. Drizzle with oil, balsamic glaze, and salt & pepper.

Take a photo because it’s too pretty to eat right now.

Toss and enjoy!

Southwestern BBQ Ranch Salad

Ingredients:

Chicken tender strips (cut into 1-inch pieces)

Spinach

Cherry tomatoes

Avocado

Corn (frozen, or fresh if you have the time!)

Cotija cheese

Tortilla strips (found in the salad dressing aisle)

Greek yogurt Ranch (less calories!)

BBQ Sauce

Directions:

Season chicken with salt and pepper. Saute in cooking oil (avocado oil) for 2-3 minutes on each side until cooked through. Cut into 1-inch pieces and set aside.

Cook frozen corn (or roast fresh corn)

Layer salad – Spinach, avocado, cherry tomatoes, chicken, corn, cotija cheese, and tortilla strips.

Mix ranch & BBQ together, drizzle over the top, toss, and enjoy!
