Quinoa Salad w/ Pomegranate, Herbs, & Feta Cheese

‘Tis the season…for Friendsgivings, holiday parties, work parties, just an overload of socializing, eating, and drinking. The anticipation of it all can be daunting. What am I going to bring? It has to impress (we’re not talking pigs in a blanket over here, although not going to knock ‘em, always good). Lucky for us, it’s also the season for pomegranate, and the opportunities are endless. Pomegranate adds just the right bite, pop of color, and twist to any holiday dish. We have a simple, “throw it in a bowl and mix it up” salad that you can literally make minutes before any get-together. 

If you’re anything like us, you like to indulge during the holidays, but sometimes you need that healthy option to make you feel like you’re on the right track (even if you’re downing your third glass of champagne and looking for more…). This salad is the perfect healthy side dish for any party. We’re using this one from Raley’s Something Extra Magazine (a publication no longer running, sadly) with a few twists of our own.

Quinoa Salad with Pomegranate, Herbs, & Feta Cheese



  • 3 cups cooked quinoa (I always do an extra cup, depending on how many people you need to feed)
  • 1 ½ cups fresh pomegranate seeds
  • 1 cup crumbled feta cheese (again, I love cheese, so I always add more than the suggested amount)
  • ¼ cup fresh chopped mint
  • ¼ cup fresh chopped parsley
  • 1 clove of garlic, minced
  • ½ small red onion, finely diced


  • ¼ cup lemon juice
  • ¼ cup olive oil (I use avocado oil)
  • 2 tbsp. Red wine vinegar (I use apple cider vinegar)
  • 1 tbsp. Lemon zest
  • 2 tsp. Dijon mustard
  • 1 tbsp. Agave sweetener (I add this to cut some of the tart flavors from the lemon & vinegar)
  • Salt and Pepper to taste


  1. Combine all salad ingredients in a bowl, stir until well-mixed
  2. Stir all dressing ingredients (I use a mason jar and shake shake shake!)
  3. Stir dressing into salad until well-mixed
